Peanut Butter?

My next door neighbor, an absolutely delightful character who snowbirds here, arrived today for a brief pass-through visit from New Mexico to a cooler clime in Washington.  She surprised me with the fact that she just had her 80th birthday.  So I had to make her some of her favorite cookies!!!

These are so simple, and so good, and have a tendency to disappear quickly!

 
PEANUT BUTTER CORNFLAKE COOKIES 


1 c. white sugar
1 c. corn syrup
1/4 c. butter
1 c. peanut butter
6 c. corn flakes
Bring sugar &  syrup to a boil. Remove from heat & add butter & peanut butter. Melt, pour over cornflakes. Mix together gently. Spoon onto wax paper. Makes about 50 cookies, depending on how many don't make it to the wax paper.

I like adding some chocolate chips to half of the mix.



Meanwhile, we're having a cold snap here in Tucson - only made it to mid-90s today, after we tied a record of 39 consecutive days of 100+ degrees!


The cactus are loving the weather, putting out gorgeous flowers, while most civilized plants are wilting.

good morn...luv the very easy PB cookie recipe and esp. the addition of the Choc Chips. Yums! And great photo set-up!

VERY surprised at neighbor's age - she doesn't truly look or act a day over 67! Really. Good for her.

Your cacti look very happy...hope you are too!
