Cool Summer - Not

 One hundred and six degrees as we speak!   Triple digits since the first of June and no end in sight, and most days have been 104 or higher.  Good thing it was a beautiful spring!  And to think, summer doesn't even start until Friday!

The birdies are busy feeding their babies, and the roadrunners are busy trying to catch and eat all the little babies.  It's hard to love Mama Nature sometimes - seeing the Roadrunners decimate the little quail families is very sad to watch.
 

So the time is perfect for a cool, refreshing and simple cucumber salad - one of my very favorites of all time!

 
CUCUMBER – SOUR CREAM SALAD


1 tsp dill weed
1 ½ tsp salt
1 C sour cream
½ C thinly sliced onion
2 T lemon juice
4 C thinly sliced cucumbers

toss lightly together and chill at least 2 hours – this would feed about 4-6 people.

Some people put fresh parsley in, instead of dill, plus garlic and paprika. I like the original best.

The little cactus pictured here is an inch and a half in diameter, so you can imagine how tiny the little flowers are!
